Abstract
One reason Idaho potato acreage devoted to the Russet Burbank has declined in recent years is because of the development of new cultivars, including Gem Russet. Based on three years of research conducted at the University of Idaho Kimberly Research and Extension Center, this classic six-page publication provides storage recommendations and discusses the potato's dormancy length, glucose/sucrose development, fry color, mottling tendency and Fusarium dry rot susceptibility.
