Abstract
Dakota Russet is a multipurpose and popular potato cultivar whose Pacific Northwest acreage has expanded in recent years. With increased yields comes larger storage volumes. Based on the results of 2020–22 field studies conducted at the University of Idaho Kimberly Research and Extension Center, learn the best management practices for their upkeep, including ideal temperatures, storage duration, and dealing with bruising and disease and other postharvest qualities, like reducing sugar concentrations and fry color.
